[FEAT] Give the ability to rename Sources

Give users the ability to rename sources.

Also default the exa ones to utilse the favcon/name

I am currently facing issue where I cannot add two mcp of the same type.

i.e. I have two atlassian MCP, but they both save under the same key atlassian_mcp.

This worked in the previous version fine with renaming.
