[Python] Unused public APIs of `CopilotSession`

The following have no e2e tests or use in `test/harness`:

- `workspace_path`
- `set_model()`
- `destroy()` (deprecated)

I don't know if the lack of use is a testing oversight or these parts of the API should go away.
