🧪 Testing: Added preference tests to Progress Dashboard

• Fixed vitest version resolution to make npm run test work.
• Added tests for updating various user preference components (custom cursor, density, themes, etc.) within ProgressDashboard.test.tsx to increase test coverage.
• Tests now successfully run and pass CI test and build checks.
